Beet and pear salad with pomegranates and walnuts

Breakfast

Fresh fruit and feta salad

Ingredients:

  • 2 cups mixed greens (arugula, spinach, or baby kale)

  • 1 cup fresh berries (strawberries, blueberries, raspberries)

  • 1 ripe peach or nectarine, sliced

  • ½ cup cucumber, thinly sliced

  • ¼ cup red onion, thinly sliced (optional for a bit of zing!)

  • ¼ cup crumbled feta cheese

  • 2 tbsp raw pumpkin seeds or sunflower seeds (optional for crunch)

  • 1 tbsp extra virgin olive oil

  • 1 tsp honey or maple syrup (for sweetness)

  • 1 tbsp balsamic vinegar or lemon juice

  • Salt & pepper to taste

Lunch

Ingredients:

  • 2 medium beets, roasted or boiled, peeled, and sliced

  • 1 ripe pear, thinly sliced

  • ¼ cup pomegranate seeds

  • ¼ cup walnuts, toasted

  • 2 cups mixed greens (spinach, arugula, or baby kale)

  • 2 tbsp crumbled goat cheese or feta (optional for creaminess)

  • 1 tbsp extra virgin olive oil

  • 1 tsp balsamic vinegar

  • 1 tsp honey or maple syrup

  • Salt and pepper to taste
