Beet and pear salad with pomegranates and walnuts
Breakfast
Fresh fruit and feta salad
Ingredients:
2 cups mixed greens (arugula, spinach, or baby kale)
1 cup fresh berries (strawberries, blueberries, raspberries)
1 ripe peach or nectarine, sliced
½ cup cucumber, thinly sliced
¼ cup red onion, thinly sliced (optional for a bit of zing!)
¼ cup crumbled feta cheese
2 tbsp raw pumpkin seeds or sunflower seeds (optional for crunch)
1 tbsp extra virgin olive oil
1 tsp honey or maple syrup (for sweetness)
1 tbsp balsamic vinegar or lemon juice
Salt & pepper to taste
Lunch
Ingredients:
2 medium beets, roasted or boiled, peeled, and sliced
1 ripe pear, thinly sliced
¼ cup pomegranate seeds
¼ cup walnuts, toasted
2 cups mixed greens (spinach, arugula, or baby kale)
2 tbsp crumbled goat cheese or feta (optional for creaminess)
1 tbsp extra virgin olive oil
1 tsp balsamic vinegar
1 tsp honey or maple syrup
Salt and pepper to taste
